Great burger tonight at The Speckled Trout, but I'm wishing I’d ordered the trout.
The burger was great. Locally NC-sourced wagyu beef from Providence Farmstead. Goat cheese. Caramelized onion. Tomato. Romaine. Bacon jam. Garlic aïoli (Yes, please!). Potato bun (Not brioche! Yay!). What's not to love?
The burger patty was thick and cooked perfectly to my medium rare preference. Every bite of the whole burger was a delicious mix of all the flavors and the potato bun held up to the powerful jaw extension required for such a tall beef enhance food structure. A brioche bun would have melted away like cotton candy under a hot desert sun, so kudos to TST for using a stronger bread for such a massive creation.
Now that said about the burger... Sarah’s fish was fantastic. Hmmmm. A place called "The Speckled Trout" serving tasty trout? Wow. Who’d a thought? Sarah. That’s who.
